 Molly Malones Irish Pub Phuket, Thailand

 

Molly Malones Irish Pub is a 250 seat restaurant/Irish pub located at the Baan Thai Resort & Spa on Patong Beach Phuket Thailand. The pub opened up on October 1st 1999 & specialized in both traditional Anglo Saxon & International cuisine, also including an extensive range of draught stouts & beers, with a 40/60 food & beverage sales breakdown. Overseeing the design, construction & opening, I took the business from the first Irish pub in southern Thailand to one of the leading food & beverage establishments in southeast Asia. As the GM over the past 15 years, I managed to steer the business through all the economic, political & natural disasters that devastated the island’s economy. With a finger on the pulse management style & a quick keep it simple attitude, I managed to overcome these situations & recover. Molly Malones first ROI was paid back in full in less than 10 months. 

 

Responsibilities

  • Design, construct & operate the restaurant.

  • Recruiting & training all staff & positions, payroll & manning guides.

  • Inventory control, loss prevention, admin, accounting & banking.

  • Develop all food & beverage menus, including product sourcing & plate costing.

  • Recruit & hire bands / musicians / entertainers.

  • Negotiate lease extensions with the land lords.

  • Prepare end of month accts & P&L reports.

  • Develop food & beverage menus, itemize costs,  & adapt to season, tourist demographics & economic trends.

  • Overcome social, economic, political & natural disasters by adapting to the situation & implementing changes. IE; sars, Bali bombing, bird flu, swine flu, tsunami, airport protests & closures, two military coups & the current economic crash.

  • Achieve average Food & Beverage Cost of 30% 

  • Tsunami Recovery, rescue all staff, protect damaged property, salvage safe & re-coup the cash I on property.

  • Spearhead the insurance claim & negotiate with the loss adjustors & recover 36m Baht.

·      Rebuild & kick start the outlet from scratch after the tsunami with a budget of 12m Baht.

 Scruffy Murphys Irish Pub Patong Beach Phuket, Thailand

 

Scruffy Murphys Irish Pub opened September 1st 2001, was a 200 seat bar located on Bangla road, Patong beach. Scruffy Murphys operated in tandem with Molly Malones however with a slightly different concept as a live music venue, Scruffy’s catered for a younger crowd

pre-clubbing crowd it became more of a late night venue. With  Food & Beverage sales breakdown of 30 / 70 food. Opening 10 days before 9 /11 we struggled in the beginning, however the concept of a safe & clean environment in Bangla road aided in its recovery & over the 14 years lease stayed that way. Scruffy’s ROI in less than 12 months.

  • Tsunami Recovery, rescue all staff, protect damaged property, salvage safe & re-coup the cash.

  • Due to the tsunami Scruffy’s had to close for two months due to the pending insurance claim, at this point I negotiated a no rent period until we opened again. 

  • In 2006 & 2009 I negotiated a monthly payment plan for the remainder of the lease contract (6 x years).

·November 15th 2014 the lease expired & the business was closed. I supervised all outstanding debt & property handover.

Coyote Mexican Bar & Grill Phuket, Thailand

 

Coyotes Mexican Restaurant & Margarita Bar is a 950 sq meter, 350 cover restaurant, covering both the 2nd & 3rd floors of the Baan Thai Resort & Spa.  First opened December 31st. Off to a slow start & located on the second floor Coyotes grew into a very profitable outlet. More of a destination dinning experience Coyotes had a 70/30 split on food & beverage sales. 

 

Responsibilities

  • Oversee construction & operation.

  • HRD, recruiting & training all staff & positions.

  • Control all back & front of house procedures.

  • Stock ordering, control, accounts & costs.

  • Prepare monthly P&L reports.

  • Develop all food & beverage menus, including product sourcing & plate costing.

  • Set up & run all aspects of admin, cashiering, accounting & banking.

  • Oversee all aspect of sales & marketing.

  • Oversee all aspect of admin / accts / finance / profit & loss.

  • Negotiate lease extensions with the land owners.

  • Cover all aspects of the position of GM.

The Chicago Steakhouse Phuket, Thailand

 

Chicago steakhouse is a steakhouse concept based on the late 20's art deco style & prohibition era Chicago.

With the 3rd floor of the Coyote restaurant not being used, I designed a turnkey outlet with surround booth seating, circular salad bar & spiral stair case entrance. Based on a value added dinning concept & to reflect the changing demographics of Patong, the salad bar buffet was essential. Totaling 120 seats Chicago’s is very popular for functions & parties & family dinning.

Angel City Diner Bangkok, Thailand

 

Angel City Diner was a 150 seat restaurant design in the concept of a 1950’s American Diner.

I designed & built the outlet from the ground up to a turnkey operation. I also had to negotiate with the building management, the Jurassic Committee, I also prepared a concept presentation to build the restaurant & propose it for a committee vote in which 100 resident turned up.

 

Achievements

 

  • Design & build an indoor kitchen with a cold air return. The indoor kitchen was located as part of the counter, with a traditional back splash finish.

  • Installed to specification the gas system & pipe lines in accordance to Thai building codes.

 

  • Install a Rock-Ola juke box plus 11 table selectors.

  • Purchase memorabilia & décor.

  • Set up all aspects of admin, POS, accounting, inventory & cost control.

  • Seek authorization to move the existing security gate & install an entry & exit automatic boom gate.

 

  • Negotiate with the management company, & owner committee to lease an area of the property located on the side walk. 95 sq meter for 85,000 Baht per month with a 3 year + 3 year contract. This area was proposed for the Kazbah Restaurant.

  • Complete the entire set up under budget.

The Kazbah Bar & Restaurant Bangkok, Thailand

The Kazbah Restaurant is an open air restaurant located in front of the Prime 11 condominium building on Sukhumvit Soi 11. Design, build & turnkey handover.

 

Achievements

 

  • Negotiate lease contract.

  • Co-ordinate the building management, local Govt & building permits & fees.

  • Design & set up all garden landscaping.

  • Designed, built & setup for turnkey handover.

  • Set up the outside bar & service area.

  • Installed underground wiring, lighting & retractable roof.
